ZERO CALORIES STRAWBERRY POPSICLES


Ingredients

1 tbsp Stevita Strawberry (stevia sweetened drink mix)
400 ml water

Preparation

-Use a shaker cup to mix 1 tbsp stevita strawberry with the water
-Pour the mix in Popsicle molds and freeze overnight

ZUCCHINI MUFFINS


Servings: 8 (1-2 per serving)

Ingredients:

• 2 eggs
• 1 1/2 cups of shredded zucchini 
• 1/2 tsp vanilla
• 2 tbsp organic honey
• 1/2 cup (60g) rolled oats
• 1 tsp baking powder
• 1/8. tsp salt
• 1 tsp cinnamon
• 1 scoop vanilla protein powder

Preparation:

Preheat oven to 350 degrees
Put all ingredients in a blender and blend until smooth.
Spray coconut oil spray into a muffin pan, pour batter into the tins. 
Put in oven and cook 20 minutes or until muffins are pulling away slightly from the pan and tops are slightly browned.

Oven baked sweet potato fries and Paleo mayo dip


Ingredients (Serves 1)

  • 1 medium sweet potato peeled and sliced into strips
  • Salt and pepper
  • Mixed herbs

Preparation

-Preheat oven to 425 degrees.
-Steam sweet potato strips for 6 to 8 minutes
-Combine spices in a small bowl. Add steamed potatoes and spices to a large mixing bowl, toss to coat all potato slices.
-Place potatoes in a single layer on a cookie sheet lightly sprayed with non-stick coconut oil spray, or use a non-stick baking sheet.
-Bake for around 15 minutes or until tender on the inside and crunchy on the outside.

Spinach protein pancakes

Ingredients 
For pancakes
1/2 cup rolled oats 
1/2 cup egg whites
1 tsp baking powder
1 tsp flaxseed ground
1 cup Spinach 
Stevia

For topping
1/2 blueberries 
1 tbsp coconut syrup 

Preparation
1⃣Combine all ingredients into blender or food processor and blend till smooth consistency. 
2⃣Cook pancakes, 2-3 minutes each side.
3⃣Too with blueberries and coconut syrup!

Choc whey protein brownies


Ingredients (makes 6) 

  • 2 scoops of chocolate whey protein
  • 4 egg whites
  • 1/2 cup low fat cottage cheese
  • 1 cup oats
  • 1/2 tsp vanilla essence
  • Stevia
  • 1/8 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup unsweetened cacao powder
  • 1/2 cup water


Preparation

- Preheat oven to 350 degrees
-Mix all ingredients until well blended, pour mix into baking pan and bake for 20 min!

Nuttynana oatmeal


Ingredients

1/2 cup rolled oats
1 cup water
1/2 tbsp organic cacao
1/2 cup Egg whites
Stevia

Topping
1/2 banana
Pecans
Shredded coconut

-In a medium saucepan add all ingredients besides the egg whites bring to boiling then reduce heat and add egg whites and simmer, stir until  egg whites are cooked 
-Top with 1/2 banana, pecans and coconut!

Ingredients
1/2 cup oats flour
3 egg whites
1 scoop of choc protein powder
1/4 cup unsweetened almond milk
Almond essence
1 tbsp organic Cacao Powder
1 tsp Baking Powder
Stevia
Filling
2 tbsp Greek yogurt & stevia
Topping
Blueberries 
Pinch of cinnamon 

Directions 

Pancakes
1. Put egg whites, oats, baking powder, almond milk, protein powder, cacao, almond essence and Stevia in the blender. 
2. Blend for 30 seconds on med-high speed. 
3. Spray a pan with non-stick coconut oil spray, pour batter on pan

1.Mix Greek yogurt and stevia and put in between pancakes

Low carb egg whites rolls

Ingredients
6 egg whites
1/2 tsp vanilla extract
1/4 tsp baking powder
Pinch of cinnamon
Stevia
Handful of raspberries 
Instructions
1⃣Combine all ingredients (leave raspberries and cinnamon aside) into blender or food processor and blend till smooth consistency. 
2⃣Cook all the mixture as one big roll, 2-3 minutes each side. 
4⃣ Roll it up, cut it in smaller rolls top with the raspberries and cinnamon

Mixed berries egg whites rolls


Ingredients

5 egg whites
1/2 tsp vanilla extract
1/4 tsp baking powder
Pinch of cinnamon
Stevia

Topping

1 tbsp Greek yogurt 
Handful of mixed berries 

Instructions

For rolls
1⃣Combine all ingredients into blender or food processor and blend till smooth consistency. 
2⃣Cook rolls 2-3 minutes each side.

For topping 
Mix some stevia vanilla drops with the Greek yoghurt top rolls with the mix & then add a handful of mixed berries! Yum yum!

Quick and easy cauliflower and broccoli Paleo mash


Cauliflower and broccoli mash
 For 1 serve
Steam 1/2 cup of cauliflower and 1/2 cup of broccoli.
Pulse in food processor until it is almost mashed! 
Add 1tbsp of homemade Paleo mayo (will post recipe after this one!), onion powder, salt and pepper
Top with chives and lemon juice! 

Chocavo mousse

Serves 2
Ingredients:
1 avocado
2 tbsps organic cacao powder
Stevia
1 tbsp of organic honey (optional if you don't want to use stevia)
Instructions 
Blend all ingredients in a food processor and make it smooth and creamy.
ENJOY 

Egg whites banana roll

Ingredients
4 egg whites
1/2 tsp vanilla extract
1/4 tsp baking powder
Pinch of cinnamon
Stevia
Filling
1 medium banana
1 tbsp coconut sugar
Coconut oil spray
1 tbsp organic cacao powder 
1 tbsp water
Some walnuts 
Instructions
For rolls
1⃣Combine all ingredients into blender or food processor and blend till smooth consistency. 
2⃣Cook all the mixture as one big roll, 2-3 minutes each side. Leave aside
3⃣ Spray coconut oil on a pan, add coconut sugar and cook banana for a couple of minutes, leave aside
4⃣ Mix the cacao powder with water and add walnuts, spread mixture all over roll
4⃣ Add banana and roll it up!

Poppy seeds and lemon pancakes

Ingredients
120ml egg whites
1 tsp baking soda
Juice from 1 lemon
1 tsp poppy seeds
1/3 cup coconut flour 
1 tsp vanilla essence
Stevia

For topping
1 Banana thin slices
1 tsp coconut syrup
🔹Directions
1. Mix all ingredients together in blender expect poppy seeds.
2. Add poppy seeds to batter and give it a shake.
3. Use a non stick pan add 1 tsp coconut oil, put on low-medium heat
4. Add the batter onto your pan
5. Once it begins to bubble, flip over and let sit for about another 20-30 sec.
6. Slide off of pan and top and fill with banana slices and coconut syrup!

Strawberry chia pudding

Marsala Chai

(Makes 4 cups)
Ingredients 
2 cups any milk substitute (almond coconut, rice, etc)
2 cups water
4 whole cloves
2 crushed green cardamom pods
2 crushed peppercorns
1 cinnamon stick
1 grape-sized piece peeled, chopped ginger

2 tbsp. black tea leaves
Directions 
-Combine milk substitute, water and spices in a medium saucepan.
-Simmer over medium heat for 10 minutes, stirring occasionally.
-Add stevia and tealeaves. Stir, and then simmer for 5 minutes.
-Strain into glasses or mugs and serve.

Mango, peach and berry smoothie

Mango layer
1 small mango
1/2 frozen ripe banana
1.5 cups cold water

Chicken stuffed zucchini boats

Ingredients
For the zucchini boat
1 big zucchini
2 tbsp organic tomato sauce
1 tbsp water
1/3 cup diced red capsicum 
80g shredded chicken breast
1/2 tsp dried oregano
Salt and pepper to taste
For Topping
Chives
Feta
Directions
-Bring a large pot of water to boil. Preheat oven to 400°. Cut zucchini in half lengthwise and using a small spoon, scoop out flesh. Chop the scooped out flesh of the zucchini in small pieces and set aside. Drop the zucchini halves in boiling water and cook 1 minute; remove from water.
-In a large pan, heat 1 tbsp coconut oil and red capsicum, chopped zucchini and chicken breast. Cook on medium-low heat until chicken is cooked. Season with salt and pepper and cook about 4 minutes. Add water, and tomato paste and cook a few more minutes.
-Using a spoon, fill zucchinis with chicken mixture, pressing firmly.
-Top each with feta & chives
-Cover with foil and bake 35 minutes until cheese is melted and zucchini is cooked through.

1 large ripe mango

CACAO OIAJ

(Makes 3 containers of 210ml)
Ingredients 
1/2 cup Oats
1 cup unsweetened Almond Milk
1 cup water
2 tbsp cacao powder
1 tbsp Chia Seeds
1 tbsp flaxseed ground

1 banana (divided in 3)
2 tbsp Greek yogurt per container

1. Mix all ingredients together.

VEGAN BOLOGNESE SAUCE

Ingredients
1 spanish onion, finely chopped
2 celery sticks, finely chopped
1 carrot, finely chopped
1 small green capsicum, finely chopped 
2 shallots, finally chopped
1 x 400g tin chopped tomatoes or natural tomatoes, finely chopped 
1 cup organic tomato paste
1/2 cup water
2 tablespoons cup extra-virgin olive oil
1/2 teaspoon fresh oregano 
Salt and pepper 
Preparation
-Put oil in a pan and cook onion, stirring regularly. Add vegetables to the pan; cooking for 5 minutes.
-Add seasoning and stir for 1 minute then add the tomatoes.
-Bring to a gentle simmer, cover and cook for 15 minutes, stirring occasionally and adding a little water if it starts to stick.
-Serve & enjoy!

BLUEBERRY AND COCONUT FLOUR PANCAKES


Ingredients

-For pancakes

2 tbsp oats flour
1/3 cup coconut flour
2 egg whites
1/4 cup unsweetened almond milk
1tsp chia seeds 
1 tsp organic vanilla essence
1/2 tsp baking powder
Stevia

-For topping & filing

2 tbsp Greek yoghurt  
Vanilla stevia drops 
Handful of blueberries 

Preparation

-For pancakes 

Blend all ingredients together.
Cook pancakes until golden brown

-For topping & filling

Mix some stevia vanilla drops with the Greek yoghurt and fill in between pancakes, then add handful of blackberries on top!

Clean Eating Breakfast oats


Ingredients

1/2 cup wholemeal oats
1 cup unsweetened almond milk
1 cup water
1 tbsp chai seeds
Stevia
1/2 tsp cinnamon
1/2 cup berries

Topping

Coconut chips

Preparation

Combine oats, almond milk, water, chai seeds & Stevia in a pot medium heat for around 5 to 10 min, add berries and mix.
